The yellowing comes from body oils (sebum and fatty acids from skin) that oxidise over time as they are exposed to air. This is the same chemical process that makes butter turn yellow or olive oil become rancid -- fatty acid oxidation produces coloured compounds called lipid peroxides.
Characteristics: The yellow areas tend to correspond to where body contact is heaviest -- typically the shoulder, hip, and lower back zones. The staining is diffuse with no sharp edges. On a mattress that has been in use for years without a protector, these zones can be quite large.
