There are two forces at work during Labour Day that do not exist during other holiday sales:

They might have a new comfort layer, a revised coil configuration, or updated branding. But the introduction of a "new" model means the "old" model becomes clearance inventory. Retailers are motivated to sell it because they need the floor space for the replacement.
Force 2: Retailers clear floor samples. A floor model mattress that has been on the showroom floor for 8 to 12 months is a depreciating asset. It takes up space, it has been tested by hundreds of customers, and it is no longer the newest thing in the store. Labour Day is the traditional moment to mark these down and move them.

In August, new model stock begins arriving at retailers. The showroom now has two versions of similar mattresses: the current model and the incoming replacement. Both are genuinely good products. The current model is priced to sell because the floor space it occupies needs to hold the new version.
By October, the transition is complete. The old models are gone (sold at reduced prices) and the new models are at full price.
